Tasty Tuesday: Chicken and Black Bean Burritos


I've posted this recipe before, but it's one of our all-time favorites at our house! So I just have to share it again. I first discovered it in one of my first issues of Food Network magazine. My wonderful secret sister got me a subscription to it last year. Anyway... this recipe is so easy, so healthy, and so yummy!

Chicken and Bean Burritos

Ingredients
1/2 cup brown rice
2 cloves garlic; 1 smashed, 1 minced
Kosher salt and freshly ground pepper
1/2 pound (about 2 cups) frozen diced butternut squash, thawed
1 cup shredded rotisserie chicken, skin removed
1 15-ounce can black beans
1 cup grape tomatoes
1/2 cup fresh cilantro
1/4 cup pickled jalapeno peppers, plus 2 tablespoons pickling liquid
4 8-inch whole-wheat tortillas, warmed
1/2 cup shredded reduced-fat cheddar cheese
1 avocado, sliced
Plain low-fat yogurt or sour cream, for serving (optional)

Directions
Heat a medium skillet over high heat. Add the rice and smashed garlic and cook,
stirring, until fragrant, 2 to 3 minutes. Add 1 cup water, season with salt and pepper and bring to a boil.
Add the squash and reduce the heat to low; cover and simmer, undisturbed, about 25 minutes. Sprinkle the
chicken over the rice mixture, cover and remove from the heat.
Meanwhile, make the bean salsa: Drain and rinse the beans, quarter the tomatoes and chop the cilantro and
jalapenos. Toss with the pickling liquid and minced garlic in a bowl. Season with salt and pepper.
Stir the chicken-rice mixture and spoon it down the center of each tortilla, then top with half of the bean
salsa and sprinkle with the cheese. Fold in the sides and roll up. Slice in half and serve with avocado, the
remaining bean salsa and yogurt, if desired.

Fiber 11 g; Protein 24 g

I'm gearing up for summer... and May can't be over fast enough.

And I'll soon be a regular blogger!! WOOT! I'm excited to have time to blog again soon. May 28th is my last day of school. I know you are all on the edge of your seats waiting for my next post. Ha!

Is anyone else looking forward to May being over? It's SUCH a busy month for us!

T-ball games officially started last Saturday. It was the crappiest opening day EVER. Rainy, wet, damp, and a whoppin' 42 degrees... without the wind chill. And it was SO windy! My poor kid hates playing in the cold, so there were a lot of tears. I was so much in shock that there was even a game that I completely forgot to bring my camera.

Saturday I'm throwing my little cousin a bridal shower. I say little because she's ten-ish years younger than I am. But she's nearly done with college and old enough to get married, so she's obviously not little. Luke is going to be her ring bearer and he cannot wait. All that to say that I'm so unprepared for this shower. I have ideas galore, but nothing set in stone. And it's in TWO DAYS! Eh, I've got time.

Then, there is just the end of the year chaos that comes with being a teacher. In the next two weeks we have two picnics, an awards ceremony, a guest speaker from the public library, eight birthdays to celebrate, five end-of-the-year tests to complete, grade, and record, report cards to enter and print, field day to plan & carry out, as well as five meetings to attend! And that's just the job part of my life. I'm also going on Luke's field trip to the zoo with him tomorrow, but I'm going to be a mom and not a teacher. Or try to at least.

My best friend just emailed me this morning to remind me to sign Luke up for golf camp and swimming lessons. Bless her for reminding me. Luke's going to be one busy little guy this summer, which I hope means a lot of relaxation for me... alone... *sigh* Of course, I enjoy swimming lessons because I get to sit poolside in the warm sun. But both camp and golf camp I plan on dropping him off and coming home. How awesome will that be?

Well, thank goodness for rainy days and inside recess. Otherwise I wouldn't have time to even write this one.
